The annual event, which has become a tradition in the field, gathered specialists, manufacturers, distributors and suppliers of machinery, equipment, solutions, technologies, packaging, raw materials and ingredients, to show the latest innovations and trends in the field.
During the GastroPan exhibition in Brașov, participants had the opportunity to discover a wide range of professional equipment for bakeries, pastry shops, confectioneries and kitchens, from ovens and kneading machines to equipment for packaging and presentation. In addition, the latest technologies and solutions in the field were presented, aimed at streamlining production processes and offering the highest quality products by integrating artificial intelligence, robotics, new software and more.
Among the essential aspects of GastroPan exhibition were the live demonstrations of the machines and equipment on display, as well as the confectioners, bakers, chefs from the country and abroad who presented innovative techniques and delicious recipes. The visitors could taste the newest products of Italian bakery, pre-sliced, which ensures speed and efficiency in any HoReCa kitchen. Focaccia, available in two variants, with tomatoes and oregano or with pesto sauce and tomatoes, brings innovation to any sandwich menu. The novelties in the pastry portfolio are doughnuts, donuts or mini donuts. They come in a wide range of flavors, fillings and glazes, whether we are talking about the classic flavors of vanilla, chocolate or caramel, or more special fillings such as pistachio, biscuits speculoos or fruit. The star of the stand was the new Cheesecake with Philadelphia fine cream cheese. Especially creamy and tasty, this one Cheesecake Philadelphia is already pre-sliced into 12 equal portions, making the preparation time as efficient as possible and can be customized with various fruit sauces, powdered sugar, lemon peel to offer customers a unique taste.

Demonstrations of the solutions were presented at the SARTOROM exhibitor for measuring the quality of the raw material such as the Yucebas rheograph, an equipment that determines the rheological characteristics of the flour, more precisely the behavior of the flour under the action of the forces applied to it, according to the standards AACC, ICC and ISO. With the help of the rheographer, companies in the field of milling and others bakers can measure the quality of flours, they can determine the optimal mixing recipes of different wheat varieties for flour production, can evaluate the effects of use some additives (ascorbic acid, oxidation enzymes, etc.), can determine essential values, such as: dough resistance to inflation pressure (P), elongation (L) and energy (W) and can obtain in a very short time the quality characteristics of the dough.
